Mom's Ambrosia Salad

This delicious desert contains elements of nutritious and sweet tastes. The marshmallows give a perfect twist on a healthy dish.

Ingredients:
1/2 heavy cream
1 tablespoon of sugar
4 ounces of sour cream
Approximately 3 cups of mini marshmallows
1 cup clementine orange segments approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted chopped peanuts
1/2 cup of maraschino cherries


Directions:
Place the cream and sugar into the bowl of a stand mixer with whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecan and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

Memory:
The memory my sister has of this dish is when she used to beg my mother to make it for Christmas. She loved the taste of the fluffy marshmallows and the yummy juice of the fruit and could not wait to get eat the salad again. There were many dishes at Christmas that she loved but this was definitely one of her favorites.
