This Egg Potato bread can accompany about any holiday meal!
This recipe comes from my dad, David.

Ingredients
butter
1 cup
sugar
1 cup
mashed potatoes
1 cup
salt
1 tablespoon
yeast in one up water
2 packs
eggs
3
flour
5-6 cups
Directions
1. Soften butter and add sugar.
2. Add potatoes and salt.
3. Add yeast.
4. Add 2 cups flour.
5. Add eggs.
6. Add remaining flour.
7. Set aside in a warm place until doubles in size.
8. Turn dough out onto well floured surface.
9. Gently roll out until 1 inch thick.
10. Cut 3 inch rounds and set aside on parchment paper lined baking sheets.
11. Cover 3 inch rounds with a kitchen towel and place into a warm location to rise.
12. When rounds have doubled in size, bake at 360 degrees for 15 minutes or until golden brown.
13. Cool on a wire rack and serve.

My dad's dad was in the navy and he usually not at home. His mom would make these cakes and they would enjoy them on family gatherings. This recipe reminds my Dad of those gatherings.
