Arroz con Gandules (rice with pigeon peas)

ingridients


  • 1 tablespoon of olive oil

  • 1/2 cup of sofrito

  • 1/2 green bell pepper/ red,orange and yellow

  • 1/2 of onion chopped

  • 2 packets of Sazo'n

  • 1/2 fresh chopped garlic

*2 tsp finely chopped fresh cilantro

  • 2 cups of Goya Medium Grain Rice

*1 can (15 oz.) Goya pigeon peas

  • 1/4 cup of Goya green stuffed olives sliced

  • 2 tablespoons of Goya capers

  • 1/2 of fresh red tomato


  • 1/2 of scallion (green onions)

  • my mom adds black pepper, garlic salt,Goya Adobo,

And my Moms delicious meal is done!!!!


Memory:
When my mom and her brothers got home from church they would sit down and watch family movies as their dad would cook dinner.When dinner was ready they would sit down and talk about who was going to make the best Arroz con gandules when they got older.Till this day my mom and her oldest brother Zesar sometimes have a cook off on who makes the best Aroz con gandules.
